[livejournal.com profile] selenesue wants the Ham Carolina recipe my mom ([livejournal.com profile] bkseiver) mentioned here. So here it is, just in case anybody else wants it, too.

Ham Carolina - it doesn't get much easier than this.

Bake up some cornbread.

Hardboil a couple (or 3) eggs, slice them up in a couple of directions.
Take about a pound of cubed ham
Mix together 1 can cream of mushroom soup (NOT diluted), ham cubes, egg pieces. Heat. Microwaving is okay. Pour it over slices of cornbread.

Nice to have with some of the cornbread under the ham mix, some of it on the side and buttered.

That's reminiscent of "chicken shortcake" as served in my family: creamed chicken on cornbread. We make it with a white sauce instead of the condensed soup, but the general idea is the same.
