This afternoon I've been playing with strawberries. I got more fresh strawberries, dark chocolate, and white chocolate. And Bailey's Irish Cream. When I recently got to visit with [livejournal.com profile] joyeuse13 in Atlanta, we all went to the Melting Pot (oh yum yum yum) and this time got to have the dessert fondue, a marvelous chocolate with Bailey's Cream in it. So I thought I'd try adding some in.

Mistake. Well, I guess this just shows the Melting Pot people have a lot of expertise. I melted the first batch of chocolate, stirred in some of the Bailey's, and it went CLUMPY on me immediately. Additional heat did not help. So, it shouldn't go to waste - I put spoonfuls of it onto another sheet of wax paper, and those are chilling to be my Bailey's chocolate candy. Yum. We will just have to have a drink of Bailey's later with the strawberries. [livejournal.com profile] selenite went up on the stepstool and found our shotglasses - a pair of lovely pewter ones with knotwork on the sides, wedding gifts from our friends DiAne and Phil, so we have the perfect thing to drink it in.

Fortunately I'd bought a second cup of the Baker's chocolate. (This will not surprise anyone who knows me) So I did up a bunch, [livejournal.com profile] selenite came over with another fondue fork and ate several of them warm, the rest are in the fridge. A little later I'll do it again with more strawberries and the white chocolate. (I have enough of that, and some almonds, to make almond bark again, too. YUM!)

I wouldn't be surprised if they used an extract and not Bailey's. Melted chocolate will clump if it contacts water.

When you add only a little liquid (and most particularly non-dairy liquid) to chocolate, it can "seize" aka get clumpy. There are a couple ways to fix it. Add more chocolate or add more liquid.

Or, doing what you did sounds good too. Yum.

Aha. Sounds like I should have added the Bailey's at the beginning, before starting to melt the chocolate. I was concerned that it wouldn't hold up to the microwaving. Now I know.

I prefer to melt chocolate over a double boiler.

Absolutely, yes, they do.

I still have optimistic hopes that this will happen in a peaceful manner when they're a bit younger. Or possibly just with minor injury, like when Brendan found out in summer '99 that it's a bad idea to stick your finger into those little sterno things that heat buffet foods.

But preferably NOT by becoming a melted-chocolate-covered toddler... (think of the waste of the chocolate!)
