Random food notes

There's various things I keep meaning to post about but never seem to have time. One is how my tastes in food are changing.
Firstly, salmon. My father's loved it as long as I could remember. It used to be something I'd tolerate a bite or two of now and then. Now - I've discovered I LOVE it. Grilled salmon, done with some nice herb or pepper crusting? Oh. Oh so good. Or with that orange sauce - remoulade? MMMMMM. Every time I have salmon I think about Dad.
The other is that I'm starting to have a lot more Mexican food. Not all of it. I'm really discovering that it's not peppers in general that have stopped me - it's that I acutely dislike the scent/taste of jalapenos. So if I can avoid them, I do okay. And I dunno why, but I have developed quite a taste for guacamole. I'm surprised by this - but enjoying it.

Can of salmon, tube of saltines (put them in a ziplock bag and run a rolling pin over them to turn them into crumbs), and I think it was two eggs. Beat eggs, add salmon and crumbs, work together with your hands and make into patties - fry in a bit of oil in a pan. MMMMM. I should make that sometime soon. Except I think I'd be the only one eating them.

3/4 of a tube of saltines pulsed through the food processor a couple times for crumbs
dab of yellow mustard - maybe about a teaspoon - or a very small amount of some dry colemans mustard
2 eggs
sauteed onions - about half an onion sauteed in a little butter.
You can add a pinch of parsley - dried or fresh.. it just adds a little flavor and color.
Fry in butter - not oil. Remember the oil has a flavor, and you can burn your oil very quickly, and the oil will impart a bad flavor to the patties. You will do these in batches, until they're firm, and between each batch, you want to really quickly run your pan under running water to clean out the old butter and put fresh in. Again, butter burns and after its burned, it will impart a bad flavor.
Serve by themselves with potato pancakes on the side, or in a bun with some fresh chopped onions and the salad dressing with bits of pickles in it. You'll want something tangy to go with it.
